Soba noodles with miso-roasted tomatoes
Sometimes, you don't want to spend hours making an amazing dinner, despite the delicious results that are sure to come from it. Sometimes, you want to spend a half hour at most and be done with it. This is the recipe for you. And even better, most of the time this recipe takes is simply tomatoes roasting in the oven! So you are really tied up doing stuff actively for only about 5 of those minutes.
When you put this on the table, trust me, everyone will be too busy scarfing up the dish to ask how long it took. It makes for excellent leftovers, if there are any, that is. And speaking of leftovers, if you don't use all the dressing, it goes great on a salad. You could definitely play with adding all sorts of other vegetables into this if you're feeling adventurous. But I found its simplicity to be perfectly delicious. Give it a try and let me know what you think!
Soba noodles with miso-roasted tomatoes

Level: Easy
Time: 30 minutes
Ingredients
1/3 cup canola oil
3 tablespoons rice vinegar (unseasoned)
2 tablespoons white miso
2 tablespoons toasted sesame oil
1 tablespoon honey
2 teaspoons finely grated lime zest
2 tablespoons freshly squeezed lime juice
Kosher salt
2 pints cherry tomatoes
14 oz cooked soba noodles
4 scallions, thinly sliced
1 tablespoon sesame seeds
Directions
Preheat the oven to 425 degrees.
In a bowl, whisk together the canola oil, rice vinegar, miso, 1 tablespoon of the sesame oil, honey, lime zest, and lime juice until smooth. Season to taste with salt.
On a rimmed baking sheet, toss the tomatoes with 3 tablespoons of the dressing you just made and season with some more salt. Roast for 25 minutes, stirring every now and then, until they are charred in places. Remove from the oven.
Heat a wok or large pan on medium heat. Sauté the noodles in the remaining 1 tablespoon of sesame oil for 2 minutes, stirring constantly. Add the tomato mixture, scallions, and half the remaining dressing into the wok/pan and toss everything together. Taste and season with more salt if needed. Serve with remaining dressing and garnish with sesame seeds.
